There are many physical changes that occur throughout gelatinisation. WebGelatinization (also known as pasting) is the process whereby the starch granules swell and eventually disappear, the crystalline regions are progressively ‘melted’ and the starch molecules are unfolded and hydrated, resulting in the formation of a continuous viscous paste.
